My Ooni Karu 12 is getting too hot.Updated 7 months ago
If your Ooni Karu 12 is more than 932˚F / 500˚C, do the following:
When using gas:
1. Make sure you are using the correct gas tank. If the tank is too large, the flame may become too strong.
2. Make sure you are using the correct controller. If the regulator has the wrong mBar value, it may be passing too much gas.
**If you use solid fuel:**
Be careful not to add too much hardwood. If you add too much hardwood and not
enough charcoal, the flames can become too strong.
* Start with a light base coat of charcoal and then place a few pieces of hardwood on top. Monitor the flames throughout the cooking process and add more wood if necessary (be careful not to overcrowd the brazier).
**If your Ooni Karu 12 does not exceed the temperature of 932˚F / 500˚C but is
too hot for your style of cooking, follow the steps below:

**If you use gas:**
1. Turn the heating control to maximum and preheat the oven and stone for about 20 minutes.
2. Once the oven and stone are preheated to at least 400ºC, you can top your pizza.
3. Immediately after baking, turn the dial to minimum to reduce the flame.
4. Rotate your pizza as needed and watch it closely.
Tip: You can also turn off the flame completely to cook your pizza using the
"low and slow" method.

1. Load the fuel and preheat the oven and stone for about 20 minutes.
2. Once the oven and stone are preheated to at least 400º, you can put your pizza in the oven.
3. Immediately after starting, close the chimney cover.
4. Rotate your pizza as needed to cook evenly and watch it closely.
Tip: You can even turn off the flame completely to cook your pizza using the
"low and slow" method.

**If the top of your oven appears to be glowing:**
If the oven top appears to be glowing, don't worry - this is simply due to a
buildup of carbon/soot.
To remove the carbon/soot, wait for your oven to cool completely and then wipe
it down with a dry paper towel or rag.
