What type of yeast should I use when making pizza?Updated 7 months ago
The most popular types of yeast used in pizza-making are active dried yeast,
instant dried yeast, and fresh yeast. All three result in great pizza, so it
all comes down to personal preference as to which one you should use.
Here are some things to keep in mind when deciding which yeast to use:
**Active dried yeast: **Needs to be activated in water before adding it to
flour.
**Instant dried yeast: **Can be added straight to flour without first mixing
in water (more convenient).
**Fresh yeast:** Needs to be activated in water before adding it to flour.
Tends to result in a better flavour than active or instant dried yeast, but
the difference is _very_ subtle. Shorter shelf-life than active or instant
dried.
