If your gas burner is underpowered, follow the steps below.
_Please note that you only need your oven to reach between 400˚C and 450˚C to
cook great pizza!_
**Step 1. **Disconnect the regulator from the gas tank and leave it for about
5 minutes.
**Step 2.** Reconnect the gas regulator and very slowly open the gas tap of
the propane tank.
**Step 3. **Very slowly, press and turn the gas control knob on the burner
counterclockwise. There will be a slight delay in the passage of gas from the
tube to the burner, so it is very important that this action lasts 5 seconds
from 12 o'clock to 9 o'clock.
**Step 4. **Once the gas burner is lit, continue to hold down the control
knob for at least another 5 seconds. This gives the burner a chance to fully
ignite and promote gas flow.
It's also important you've made sure:
* Your oven is on a flat surface.
* Your infrared thermometer is set to the correct emissivity level to ensure that the correct temperature is recorded. Ooni infrared thermometers are preset, so they are accurate and cannot be adjusted. If it is not an Ooni infrared thermometer gun, make sure the emissivity level is set to 0.95.
* You're holding the infrared thermometer close enough when recording the temperature. Keep it six inches from the oven mouth.
* Make sure the oven door is open when reading the temperature. With the Ooni Karu 12G oven, taking the temperature through the glass will not give the most accurate reading.
* You're using the correct gas tank and regulator.
* **If using Ooni Karu 12: **the door is off, the chimney is in place, the chimney cap is off, the chimney baffle is open.
* **If using Ooni Karu 12G:** the door is on, the chimney is in place, the chimney cap is off, the chimney baffle is open.
It's also important to consider the weather conditions. If it is very cold
outside, you may need to wait a little longer for the oven and stone to
preheat. If it's windy outside, the intensity of the flame will decrease.
Always avoid lighting the oven in excessively windy conditions or positioning
it so that the opening faces downward.
